Lemon Brownie

Zesty, fudgy, and full of sunshine—these lemon brownies melt in your mouth with every citrusy bite.

 

Ingredients:

1½ cups flour
1½ cups sugar
250g butter, softened
4 eggs
2 tablespoons grated lemon rind
¼ cup lemon juice

Directions:

  1. Preheat oven to 180°C (160°C fan bake). Line a 20cm x 30cm slice tin with baking paper.
  2. Using an electric beater, beat the flour, sugar, and butter together until well combined.
  3. In a separate bowl, whisk the eggs, lemon rind and juice. 
  4. Pour the egg mixture into the creamed mixture and beat at medium speed for 2 minutes. Then, pour the mixture into the prepared tin.
  5. Bake in the oven for 25 minutes or until golden in colour and just firm to the touch.
  6. Allow to cool for 15-20 minutes before removing from the tin.
  7. Serve with dusted icing sugar or a Greek-style yoghurt.
