Lemon Brownie
Zesty, fudgy, and full of sunshine—these lemon brownies melt in your mouth with every citrusy bite.
Ingredients:
1½ cups flour
1½ cups sugar
250g butter, softened
4 eggs
2 tablespoons grated lemon rind
¼ cup lemon juice
Directions:
- Preheat oven to 180°C (160°C fan bake). Line a 20cm x 30cm slice tin with baking paper.
- Using an electric beater, beat the flour, sugar, and butter together until well combined.
- In a separate bowl, whisk the eggs, lemon rind and juice.
- Pour the egg mixture into the creamed mixture and beat at medium speed for 2 minutes. Then, pour the mixture into the prepared tin.
- Bake in the oven for 25 minutes or until golden in colour and just firm to the touch.
- Allow to cool for 15-20 minutes before removing from the tin.
- Serve with dusted icing sugar or a Greek-style yoghurt.
