Gingernut Cookies

Crisp, spicy ginger nut cookies with a bold bite and old-fashioned charm.

 

Ingredients:

⅔ cup oil
 1 cup Chelsea white sugar
 1 egg
 ¼ cup Chelsea treacle
 2 cups flour
 2 teaspoons baking soda
 2 teaspoons ground cinnamon
 1 teaspoon ground ginger
 ¼ cup Chelsea white sugar to roll biscuits in

 

Directions:

  1. Preheat oven to 180°C.
  2. Beat oil, sugar, egg and treacle together.
  3. Stir in flour, baking soda, and spices, and mix well.)
  4. Roll the dough into golf ball-sized balls. Then roll them around in a small bowl of white sugar.
  5. Place on an ungreased baking tray 5 cm apart.
  6. Bake for 10-15 minutes, then carefully remove to cool on a wire rack and store in an airtight container.

These cookies flatten and crinkle all by themselves.
