Chocolate Peanut Cookies

Rich chocolate meets roasted peanuts in a perfectly chewy, sweet-salty cookie delight.

Ingredients:

250g unsalted butter 
1 cup white sugar (190g)
⅔ cup brown sugar, packed (130g)
1 large egg (if possible)
1 egg yolk
1 teaspoon vanilla extract
1¾ cups plain flour (220g)

Directions:

  1. Preheat the oven to 180 degrees on fan bake. Prepare two trays.
  2. Cream the butter and sugars together until light and fluffy.
    Add the egg and yolk, then beat well.
  3. Incorporate the dry ingredients and mix until just combined.
    Fold in the peanuts and chocolate. (Mixture is very thick)
  4. Roll the mixture into balls, leaving space for spreading.
    Bake for 11-12 minutes.
  5. As soon as they come out of the oven, sprinkle a little flaky sea salt on top.

This recipe comes from one of my mother's closest friends, Adrind, who, in my opinion, is a renowned baker. She has visited Whekenui with my mother, and her creations are a must-have for a Christmas treat or any tours.
