Chocolate Peanut Cookies
Rich chocolate meets roasted peanuts in a perfectly chewy, sweet-salty cookie delight.
Ingredients:
250g unsalted butter
1 cup white sugar (190g)
⅔ cup brown sugar, packed (130g)
1 large egg (if possible)
1 egg yolk
1 teaspoon vanilla extract
1¾ cups plain flour (220g)
Directions:
- Preheat the oven to 180 degrees on fan bake. Prepare two trays.
- Cream the butter and sugars together until light and fluffy.
Add the egg and yolk, then beat well. - Incorporate the dry ingredients and mix until just combined.
Fold in the peanuts and chocolate. (Mixture is very thick) - Roll the mixture into balls, leaving space for spreading.
Bake for 11-12 minutes. - As soon as they come out of the oven, sprinkle a little flaky sea salt on top.
This recipe comes from one of my mother's closest friends, Adrind, who, in my opinion, is a renowned baker. She has visited Whekenui with my mother, and her creations are a must-have for a Christmas treat or any tours.
