Carrot Cake

Earthy carrots, warm spices, and creamy frosting make this cake a comforting favourite.

Ingredients:

1 cup neutral oil
2 cups raw sugar
2 tablespoons golden syrup
4 eggs
1 cup wholemeal flour
1 cup plain flour
pinch of salt
2 tsp cinnamon
1 tsp mixed spice
1 tsp ground ginger
3 cups grated carrot
2 tsp baking soda
1 tbsp orange juice

Directions:

  1. Preheat the oven to 160°C.
  2. Blitz oil, sugar, golden syrup and eggs. Add flours, salt, spices, grated carrot. Blitz just to combine.
  3. Fold in the baking soda dissolved in orange juice.
  4. Bake for 50-60 minutes.

Cream Cheese Icing

35g soft butter
125g cream cheese (not spreadable)
Juice and finely grated rind of ½ lemon
2 cups icing sugar

Prepare the icing by blending all the icing ingredients until smooth and spreadable. This makes about 1½ cups of icing.
