Carrot Cake
Earthy carrots, warm spices, and creamy frosting make this cake a comforting favourite.
Ingredients:
1 cup neutral oil
2 cups raw sugar
2 tablespoons golden syrup
4 eggs
1 cup wholemeal flour
1 cup plain flour
pinch of salt
2 tsp cinnamon
1 tsp mixed spice
1 tsp ground ginger
3 cups grated carrot
2 tsp baking soda
1 tbsp orange juice
Directions:
- Preheat the oven to 160°C.
- Blitz oil, sugar, golden syrup and eggs. Add flours, salt, spices, grated carrot. Blitz just to combine.
- Fold in the baking soda dissolved in orange juice.
- Bake for 50-60 minutes.
Cream Cheese Icing
35g soft butter
125g cream cheese (not spreadable)
Juice and finely grated rind of ½ lemon
2 cups icing sugar
Prepare the icing by blending all the icing ingredients until smooth and spreadable. This makes about 1½ cups of icing.
